Ingredients:
for the sponge cake
2 1/2 cups fine semolina
2 1/2 cups cake flour
2 1/2 cups sugar
16 eggs
100 ml milk
2 vanilla extracts
3 teaspoons baking powder
for the syrup
6 cups sugar
5 cups water
12 spoonfuls fresh butter
juice of one lemon
the zest of one lemon
Method:
Ravani (or Revani) is a traditional greek cake from beautiful Veroia. Ravani is a golden yellow cake made with semolina and topped with lemon-flavoured syrup.
We combine together the semolina, the cake flour, the baking powder, the vanilla extracts and the salt. In the blender we beat the eggs with the sugar until the mixture thickens. While beating the eggs we add the milk little by little. We put the egg mixture in a bowl and there we mix it softly with a ladle and add in the semolina mixture. We place our mixture in a big buttered square baking pan and cook the ravani for half hour in middle heat (175 Celcium). While our ravani is baking we will prepare the syrup as follows: We add the 5 cups of water and the sugar in a saucepan and boil for 5 minutes. Before we remove the syrup from the fire, we add the butter, the lemon juice and the lemon zest. When our rabani is ready we spoon the cooled syrup little by little, so that our ravani cake doesn’t deflate.
