Zucchini Stuffed with Feta cheese and Mushrooms


4 large zucchini
500 gr small mushrooms
1 large onion
2 garlic cloves
3/4 cup crumbled feta cheese
some grated mozzarella
olive oil

We wash our zucchini and cut them in half. We scoop out with a spoon their center, and keep somewhere what we removed, till the zucchini looks like little boats. We place the zucchini on a baking paper, oil them well, add salt and pepper, and put them in the oven using the grill for about ten minutes. In the mean time we chop our mushrooms, and we finely chop the onion and the garlic cloves. Add some olive oil in a frying pan and saute the mushrooms, the inner part of the zucchini that we have kept, onion, garlic and some salt and pepper. Stir them regularly and cook them till they drink their liquids. Then add paprika, thyme and feta cheese crumbles. We stuff our zucchini with the filling we just made and sprinkle over them with grated mozzarella. We bake our zucchini at 180 degrees until mozarella has a golden brown color. Our stuffed zucchini with feta cheese and mushrooms are ready!
