Ingredients:
2 – 3 medium sized onions
2 – 3 potatoes
3 green peppers
3 red peppers (not chili)
2 eggplants (aubergines)
3 zucchini (courgette)
1 tomato (finely chopped)
Garlic (2 gloves)
1 cup fresh tomato sauce
Salt, pepper
Olive oil
Parsley
Basil
Coptional: red pepper or red peppers
Instructions:
In a large frying pan slice the onions. Cut the potatoes into small pieces. Cut the peppers, aubergines and courgettes also into small pieces. Add the fresh tomato finely chopped and the garlic finely chopped. Add the sauce, the parsley and basil finely chopped. Add the salt, pepper and oil. Stir well ad leave on low heat to cook. If necessary, add a bit of water to avoid dryness.
