Ingredients:
1 kg yogurt strained
2 cucumbers
4 garlic cloves
olive oil
vinegar
salt
Method:
There are two ways to slice the cucumber for tzatziki. We can use the cheese grater (the one with the big oval shaped holes). If we cut it that way, we ‘ll have to let it for few hours in a strainer. The other way is to slice the cucumber in small cubes. We do vertical crossed cuts along the cucumber and then we cut it horizontally. If we do it that way we don’t need to strain the cucumber. We put the yogurt in a bowl with the cucumber, the garlic mashed or in small pieces, salt and we mix them.
We add slowly vinegar (about 2 tablespoons) and olive oil (about 6 tablespoons).
We mix well and we taste the tzatziki. We might need to add some more vinegar, oil, salt or garlic – it is a matter of personal taste. We add these ingredients until its color isn’t too white and until tzatziki doesn’t taste like yogurt anymore.
